If you haven’t already noticed, mini desserts are one of my favorite things to make. When it comes to entertaining, these individual treats are convenient not only for the guests, but also the party host. Everyone can get their own and it requires no additional attention during the party.

Easy Dessert Recipe - Mini White Mocha Pudding Pies

One of my other favorite things is coffee. I may or may not talk about coffee often. I drink it daily, but I also like to use it in recipes. To put two things together I love, I made some mini white mocha pudding pies. This is a no-bake dessert that is quick and easy for last minute gatherings.

Mini White Mocha Pudding Pies Ingredients

Ingredients:

  • 3.3oz box white chocolate instant pudding mix
  • 1½ cups milk
  • ½ cup strong brewed Dark Roast Community Coffee, chilled
  • 1 cup whipped cream
  • 6 pre-made mini graham cracker pie crusts
  • 3 crushed chocolate sandwich cookies (optional for topping)
  • Cocoa and white candy melts, optional for football twist

Mini White Mocha Pudding Pies with Coffee & White Chocolate Pudding Mix
Instructions:

  • In a large mixing bowl, add pudding mix, milk, coffee and whipped cream. Whisk together thoroughly until mixture thickens.
  • Refrigerate for 15-30 minutes to allow the pudding to set and thicken.

  • Fill mini pie crusts evenly with pudding mixture.
  • Top with crushed cookies, if desired.
  • Refrigerate until ready to serve.

These mini pudding pies are a great dessert for parties and the coffee gives them a little extra kick!

  • 1 cup whipped cream
  • 6 pre-made mini graham cracker pie crusts
  • 3 crushed chocolate sandwich cookies (optional for topping)
  • Cocoa and white candy melts, optional for football twist
Instructions
  1. In a large mixing bowl, add pudding mix, milk, coffee and whipped cream. Whisk together thoroughly until mixture thickens.
  2. Refrigerate for 15-30 minutes.
  3. Fill mini pie crusts evenly with pudding mixture.
  4. Top with crushed cookies, if desired.
  5. For a football twist, make football shapes with melted cocoa and white candy melts. Once set, add one to the top of each pie.

Mini White Mocha Pudding Pies with a Football Twist

Mini individual desserts are also great for to take to parties. Since football season just started, I thought the mini pies would be great for tailgating. Game day Sundays sometimes start with early mornings to get to a tailgating spot with friends. The early morning start always calls for a cup or two coffee, especially on a crisp Fall morning.

Then with barbecue and good food, there always needs to be dessert present.

How to Make Footballs with Candy Melts

Since I love incorporating themed food whenever I can, I decided to make little footballs to top the mini pies.

Melt cocoa candy melts as directed on the packaging. Pour into a quart-sized freezer bag and snip one bottom corner (just a small snip, not too big).

Squeeze melted candy out into football shapes on a wax paper-lined cookie sheet. I recommend making at least twice as many as you need in different sizes. This way you can pick your favorites to use on the pies.

Once complete, chill in the refrigerator for 15 minutes to allow the candy to become solid again.

DIY Football Shapes with Candy Melts

Melt bright white candy melts as directed on packaging (just a few, as you don’t need that much). Pour into a quart-sized freezer bag and make the tiniest snip in one corner.

Slowly squeeze the candy out to make football laces on each candy football.

Place them back into the refrigerator for about 5 minutes. It shouldn’t take that long for the white to harden again. Place one candy football onto each mini pie.
