Kabobs don’t just have to be for outdoor grilling! These Chicken & Vegetable Skillet Kabobs are a quick and easy meal that even the kids can help make. Plus, there is a simple seasoned spread to brush on kabobs for a delicious flavor.

My kids have been more enthusiastic than ever this summer when it comes to helping out in the kitchen. Weekly they are making their own breakfast, helping prep meals, and at one point asked to take cooking classes.

This week is their last cooking class of the session and they are pretty bummed. That just means I will have to utilize them in the kitchen even more. It also gives me an opportunity to sneak in some math skills, pattern practice and fine motor skills. Plus, one day in the future they will even be cooking for me without my help, right?

Chicken & Vegetable Skillet Kabobs + a Seasoned Spread

With our hectic schedules, quick & easy dinners are essential throughout the week. When we plan meals on Sunday, I go over our schedule to see which days limit our dinner time and then get the boys’ opinions on what they think we should make one or two evenings.

Our backyard garden is thriving right now with peppers and grape tomatoes. Corbin asked what we could make to use some of the vegetables he picked from the garden this weekend. I suggested some kabobs and of course he was onboard, because he knew that was something he could help with.

Chicken & Vegetable Skillet Kabobs + a Seasoned Spread

Ingredients:

  • 1 lb boneless skinless chicken breast tenderloins, cut into 1-2″ pieces
  • 3 large bell peppers, cut into 1-2″ pieces
  • 1 red onion, cut into 1-2″ pieces
  • 15-20 grape tomatoes
  • 3 tablespoons Land O Lakes® Soft Squeeze™ Spread
  • 1 teaspoon chili powder
  • 1 teaspoon dry basil
  • 1 teaspoon black pepper
  • 2 cloves minced garlic
  • salt, to taste

Chicken & Vegetable Skillet Kabobs + a Seasoned Spread

To make skewers:

  • Rotate red onion and chicken pieces on the same skewer(s)
  • Tomatoes on seperate skewer(s)
  • Add peppers and onions on seperate skewers(s)
  • Optional: Make potato skewers. First, cube potatoes 1-2″ and microwave in a microwave-save bowl for 5-6 mins until slightly tender. Then add to skewers.

In a small mixing bowl, add Land O Lakes® Soft Squeeze™ Spread and mix in the chili powder, basil, garlic and pepper.

Corbin loves being able to do as much as possible when helping in the kitchen, so being able simply squeeze it out of the bottle right out of the refrigerator is a big deal. I didn’t realize I really needed such product, but I can’t live without it now. It is made with real butter and stays clean and crumb-free.

Brush the prepared seasoned spread onto each skewer, covering all sides.

Heat a cast iron skillet (or non-stick pan) on med/high heat.

Add skewers and cook for 4-6 mins (rotating every couple minutes), until vegetables are tender and the internal temperature of the chicken is 165°. Salt to taste.

Remove from heat and serve.

MEAL PREP BONUS:  You can easily remove the cooked pieces from skewers and refrigerate in a container for lunch(es). When ready to eat, simply add a dab of Land O Lakes® Soft Squeeze™ Spread on top before warming up.

    These look delicious! I always think of kabobs being cooked on the grill and never thought about cooking them in a skillet. I’d also love to try the Land O Lakes Squeeze spread. Bet it would be good on corn on the cob!
