Chocolate Banana French Toast Muffins

Add a little twist to french toast with this Chocolate Banana French Toast Muffins recipe. It's an easy family-friendly breakfast idea!
Ingredients
  • 1½ cup Sir Bananas™ Chocolate Bananamilk
  • 6 eggs
  • 2 tablespoons granulated sugar
  • 10 slices of thick Texas toast bread, cut in cubes or torn in pieces
  • Mini chocolate chips
  • 1 banana, sliced (or diced)
Instructions
  1. Preheat oven to 350°F.
  2. Coat muffin tin with cooking spray generously. Set aside.
  3. In a large bowl, whisk together the bananamilk, eggs, and sugar.
  4. Add bread pieces and gently mix with a large spoon until all bread is coated. If more liquid is needed, add another splash of bananamilk to ensure all is bread is covered.
  5. Spoon bread mixture into muffin tin. Each tin should be filled to the top.
  6. Top each muffin with banana pieces and mini chocolate chips.
  7. Bake for 25-28 minutes. The muffins will rise in the oven, and deflate once they come out.
  8. Let cool for a few minutes before removing from the tin.
