Banana & Berries Mini Pancake Stacks
These pancakes stacks are a fun, delicious and fruity way to get the day started!
  • 2 cup dry pancake mix
  • 1 ½ cups Sir Bananas® Bananamilk or Sir Bananas® Chocolate Bananamilk
  • Bananas, sliced
  • Various berries – sliced strawberries, sliced raspberries, blueberries
  • Strawberry topping or syrup
  • Honey
  • Extra-long elegant toothpicks
  1. Mix pancake mix and Sir Bananas® Bananamilk in a mixing bowl until smooth, with no clumps. Do not overmix.
  2. To make half chocolate banana pancakes and half banana pancakes, simply mix ¾ cup of each bananamilk varieties with 1 cup pancake mix each, separately.
  3. Warm a skillet or griddle over low/medium heat.
  4. Pour a little less than a tablespoon of batter in the skillet for each mini pancake.
  5. Flip after about 45-60 seconds. Remove from heat after another 45-60 seconds.
  6. To make pancake stacks, layer: pancake, fruit, pancake, fruit, pancake, fruit and secure with a long toothpick. Drizzle with fruit topping or honey, if desired.
