At least once a week we fire up the grill and more times than not, we grill enough food for multiple meals. It helps on busy weekdays and for quick lunches. This Grilled Teriyaki Chicken Flatbread recipe is a quick meal (or appetizer) that uses pre-prepped grilled teriyaki chicken.

It’s August and all I can think about is back-to-school shopping, scheduling, lunches, and all the other madness that goes into preparing ourselves for a new daily routine that will start in 2 weeks. When it comes down to it, our school routine means more quick, simple meals. I am also always on the look out for variety.

When at Walmart last month, I spotted P.F. Chang’s® Home Menu Sauces in the Asian food aisle at Walmart. New and currently exclusive to Walmart stores, the varieties of Teriyaki, Sesame, and Kung Pao caught my eye. I knew these would make a great marinades and sauces on our favorite dishes.

The P.F. Chang’s® Home Menu Sauce Teriyaki was already inspiring me. It got me thinking about a few different meal ideas and I was ready to start prepping our weekly menu after grabbing the rest of my groceries.

For those easy weekly dishes, one way we do this is weekly meal prep on Sundays. Not necessarily making and packing everything for the week, but getting some of the meats and such prepared and separated. To make it less of a chore, we can get together with neighbors, throw burgers and hot dogs on the grill for dinner that evening, and keep the grill going for additional meals.

Pork steaks, extra hot dogs, more burgers and a few pounds of chicken can go a long way. Earlier in the day, I can marinade some chicken breasts. Before doing so, I recommend pounding out the boneless chicken breasts to even thickness. This allows for even cooking. Place the chicken breasts in a bag or sealed container with a marinade, such as P.F. Chang’s® Teriyaki Sauce. Refrigerate for at least an hour (up to overnight if you decide to prep it the night before).

To grill the teriyaki chicken, preheat your gas grill on high with the cover closed for about 10-15 minutes. Turn the heat down to medium high, place the chicken breasts on direct heat and close the cover. Flip after about 6-7 minutes. Close again and cook for another 6-7 minutes. Remove from the grill once the internal temperature is 165°F.

For an easy weeknight dinner (or party appetizer), grab that pre-grilled teriyaki chicken out of the refrigerator and fire up the grill for this Grilled Teriyaki Chicken Flatbread.

Ingredients:

  • Rectangular flatbread
  • Olive oil
  • P.F. Chang’s® Teriyaki Sauce
  • Shredded mozzarella cheese
  • Red pepper, thinly sliced
  • Red onion, thinly sliced
  • Crumbled cooked bacon
  • Grilled teriyaki chicken, sliced
  • Green onions, thinly chopped

Pre-heat gas grill on high with cover closed for 10-15 minutes.

Since this recipe doesn’t take long to make, it is important to prep all the topping and bring them outside with you on one tray or baking sheet. Also, have another baking sheet to use when topping the flatbread.

Lightly coat each side of flatbread with olive oil.

Turn down the grill to low and place the flatbread over direct heat for 1-2 minutes, until slightly bubbling and grill marks are on bottom.

Remove from grill and place on a baking sheet, with the side that was grilled facing up.

Brush a thin layer of P.F. Chang’s® Teriyaki Sauce onto the flatbread.

Cover the flatbread with shredded cheese, leaving the edges uncovered as best as possible. Sprinkle on sliced chicken, red peppers, red onions and bacon, then top with additional cheese.

Place back onto the grill on direct heat. Close the cover and grill for about 2-3 minutes until the cheese melted. Remove from the grill, garnish with green onions and slice into desired sizes.

This recipe can be used for many occasions and the flavor is crowd-pleasing. My five year old even enjoys it.

  11. **NOTE** To prep grilled teriyaki chicken: Pound out boneless chicken breasts to even thickness, place in a bag or sealed container and fill with a bottle of P.F. Chang’s® Teriyaki Sauce. Refrigerate for at least an hour up to overnight. When ready, pre-heat gas grill on high with cover closed for about 10-15 minutes. Turn the heat down to medium high, place the chicken breasts on direct heat and close the cover. Flip after about 6-7 minutes. Close again and cook for another 6-7 minutes. Remove from the grill once the internal temperature is 165°F. Store cooked chicken in sealed container in refrigerator for 3-4 days.
