A delicious fun breakfast with the family isn’t always a weekend event, it can also be a great start on a weekday: specially a school day. A tasty breakfast for a special day could be these Banana & Berries Mini Pancake Stacks.
The first couple weeks of August, we were frantically trying to shop for school supplies. This was the first year I had to shop for all three boys. I thought it was going to be one of the more difficult parts of back-to-school.
Then last week I realized our meal plans and grocery trips were going to have to adjust. My first grocery trip to Walmart was just to gather lunch supplies and school snacks. Then, I had to make a meal plan with breakfast and dinners. The first week of school I wanted fun meals for the kids. I let them pick out some favorites.
One request from the kids was pancakes and fruit. Well while I was at Walmart, I grabbed some Sir Bananas® Bananamilk and Sir Bananas® Chocolate Bananamilk. With 8 essential nutrients (Protein, Calcium, Potassium, Vitamin A, Vitamin D, Vitamin B12, Riboflavin (vitamin B2) and Phosphorus) and no high-fructose corn syrup, it is delicious for smoothies, recipes and more. As a milk the whole family loves, why not make some fun mini pancakes with both flavors?
Banana & Berries Mini Pancake Stacks Recipe
Ingredients:
- 2 cup dry pancake mix
- 1 ½ cups Sir Bananas® Bananamilk or Sir Bananas® Chocolate Bananamilk
- Bananas, sliced
- Various berries – sliced strawberries, sliced raspberries, blueberries
- Strawberry topping or syrup
- Honey
- Extra-long elegant toothpicks
Mix pancake mix and Sir Bananas® Bananamilk in a mixing bowl until smooth, with no clumps. Do not overmix.
To make half chocolate banana pancakes and half banana pancakes, simply mix ¾ cup of each bananamilk varieties with 1 cup pancake mix each, separately
Warm a skillet or griddle over low/medium heat.
Pour a little less than a tablespoon of batter in the skillet for each mini pancake.
Flip after about 45-60 seconds. Remove from heat after another 45-60 seconds.
To make pancake stacks, layer: pancake, fruit, pancake, fruit, pancake, fruit and secure with a long toothpick.
Drizzle with fruit topping or honey, if desired.
The pancakes stacks are a fun way to get the day started, served with Sir Bananas® Bananamilk, of course.
