Homemade dinner enjoyed around the table with the family each night is my favorite part of the day. My husband loves cooking and he gets the kids involved in meal prep as much as possible. 

No matter how busy things get, spending that time together each evening puts a smile on my face (no matter how many dishes I have to do afterward). So on days we have limited time, quick and easy recipes really come in handy. For an easy side dish, we whip up these simple roasted potato bites.

Roasted Potato Bites - An Easy Side Dish Recipe

Ingredients:

  • 4-5 medium russet potatoes
  • salt
  • pepper
  • garlic powder
  • parsley
  • brown gravy, prepared

Preheat oven to 400°.

Roasted Potato Bites - An Easy Side Dish Recipe

Rinse & cut potatoes into approximately 1/2″ pieces. 

Steam the potatoes for 6-7 minutes to soften.

Place steamed potatoes onto a baking sheet. Gently smash potatoes with a fork.

Sprinkle them with salt, pepper and garlic powder.

Roast in the oven for 15-20 minutes.

Top with parsley and serve with brown gravy.
