For the first time in just over a year, two of the three kids will be back in team sports starting this week. That means at least four days a week involve at least one practice or game.

Top that with work schedules, school, homework, and everything else, we are going to be on-the-go constantly. If you have followed me for a while, you know family dinner is important to me. No matter how much we have going on, we do everything we can to sit down at the same table for dinner, as a family of five.

To make dinner easier throughout the week, we typically plan all the meals on Sunday. We look at the schedule for the week and decide which days need quick dinners or even pre-prepped meals.

One way to get an easy weeknight dinner is pairing Pictsweet Farms® Vegetables For Roasting with a meaty protein, like in this sausage and vegetables sheet pan dinner.

Sausage & Vegetables Sheet Pan Dinner

Ingredients:

  • 1 pkg. Pictsweet Farms® frozen Vegetables for Roasting Sweet Potatoes, Red Potatoes, Carrots & Butternut Squash
  • 14 oz smoked rope sausage, sliced
  • 3 tablespoons olive oil or other cooking oil
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Sausage & Vegetables Sheet Pan Dinner

Preheat the oven to 450°F.

Place the sausage and frozen vegetables in a shallow baking pan. Drizzle with oil and seasonings.

Toss to coat and arrange in a single layer.

Roast for 20 minutes or until desired browning occurs. Stir halfway through.
