Spring gatherings and entertaining is in full swing around here. That means warm weather, refreshing drinks, and delicious appetizers. This avocado pico de gallo snack cracker recipe makes a great appetizer for your next gathering.
The weather hasn’t stayed fully ‘spring-like’ yet, but we aren’t letting that slow us down. The calendar is pretty full and we are trying to squeeze in as much fun as possible. Spring entertaining is a favorite of mine because we can enjoy the day outside. Well, not quite every day yet, because Missouri weather is still all over the place. But when we do, it’s a blast.
With a full schedule, I find it helpful to shop at Sam’s Club a few times a month for our necessities and entertaining supplies. Most of the time I order online for pick-up, but at least once a month I go inside the store to see if anything new catches my eye. With all our entertaining we do, picking up larger quantities is extremely beneficial. Such as Diet Coke® 2 Liter Bottles, 4-pack sold at Sam’s Club, which makes it easy to have enough drinks for everyone.

When it comes to small bites at gatherings, one of my favorite dips is fresh pico de gallo. One new way I have been serving it is on snack crackers with avocado.
Avocado Pico De Gallo Appetizer Recipe

Ingredients:
- 1.5 cups diced tomatoes (about 2 tomatoes)
- 1 cup diced red or white onion (about 1 small onion)
- ½ cup chopped cilantro
- ⅓ cup diced jalapeno (about 1 small jalapeno)
- 1 lime, cut in half
- salt & garlic salt to taste
- 1 ripe avocado
- snack size bruschetta toast or crackers
To make the pico de gallo, in a medium bowl, mix diced tomatoes, onion, jalapeno, and cilantro. Squeeze juice from half the lime into the mixture. Add salt and garlic salt to taste.
In a small bowl, mash 1 ripe avocado with the juice from the other half of the lime.
Spread avocado onto each cracker and top with pico de gallo.
Serve immediately.
To save time and make the recipe even easier, you can buy pre-made pico de gallo dip and avocado spread. Then right before your guests arrive, layer each onto the crackers.
Now I am impatiently waiting for that everyday spring weather to arrive, especially on the weekends! I load up a serving tray with glasses of ice, Diet Coke® 2-liters, a pitcher of water, appetizers, and fresh produce and head to the patio.
Spending time with loved ones, enjoying the weather outside, laughing, exchanging cheers, and having a great time. It’s priceless!

Avocado Pico De Gallo Snack Crackers is an easy recipe that makes a great appetizer for any gathering.
Ingredients
- 1.5 cups diced tomatoes (about 2 tomatoes)
