If you are looking for a festive brunch cocktail to kick off Christmas day, this White Christmas Mimosa might just do the trick.
This year, my go-to brunch and dinner cocktails have been made with Prosecco. There’s just something about the dry sparkling wine that mixes well with juices and fruity liqueurs.
I started making mimosas with Prosecco earlier this year. It came after a recommendation from a liquor store owner when he recommended his favorite brand/bubbly.
Since then, I have been trying a number of bubbly combinations. Earlier this month, when going to buy cranberry juice, I saw white cranberry juice. I knew right away it would make a delicious Christmas drink.
White Christmas Mimosa Cocktail Recipe
Ingredients:
- 2 parts Prosecco (or any dry sparkling wine)
- 1 part white cranberry juice
- Clear sanding sugar sprinkles, optional
- Fresh rosemary sprig and whole cranberries for garnish, optional
Place some water in a shallow dish or bowl and in place the sugar sprinkles in a separate shallow dish or bowl.
Dip the rim of a cocktail glass or champagne flute in the water, wetting it evenly. Then, evenly dip it into the sugar sprinkles.
Pour Processo into the glass and top with white cranberry juice. You can easily use more or less juice, to taste.
If desired, garnish with a small sprig of fresh rosemary and/or some whole cranberries.
