Breakfast is one of those times that I often find myself rushing around scrambling in an attempt to get food on the table. Either I just didn’t get enough sleep (working late), or I just have too much to do to get everyone out the door in time. However, as crazy as it may sound, it happens to be my favorite meal.

There’s just something about breakfast foods. Not only is it the meal that starts your day, but there are so many delicious options. Plus, typical breakfast foods don’t always have to be just for the mornings.

I remember when I was a teenager, my best friend and I would make french toast every other day after school. Sometimes, more often than that. I guess you can say it was our thing.

Fast forward many years later, and I don’t get the chance to make french toast anywhere near as often as I used to back then. However, I do have some opportunities to share my love of french toast with my kids.

Then I found a new idea to add a twist of flavor. One of the main ingredients in french toast is milk. So why not use chocolate milk, bananamilk, or even better, chocolate bananamilk in french toast?  That’s exactly what I thought when I saw Sir Bananas™ Chocolate Bananamilk. It’s made with real bananas and cocoa with no artificial colors or flavors. So adding it to the recipe in place of regular milk not only add 8 essential nutrients, but also gives the recipe a whole new taste with such a little switch.

To add another twist to one of my favorites, I also like to make french toast muffins. It is quick to prep and I can work on getting everything else ready in the morning while it bakes.

Chocolate Banana French Toast Muffins Recipe Ingredients

This recipe makes 12 muffins. The ingredients can easily be cut in half to make 6 muffins, which is what I did for the pictures. 

Ingredients:

  • 1½ cup Sir Bananas™ Chocolate Bananamilk
  • 6 eggs
  • 2 tablespoons granulated sugar
  • 10 slices of thick Texas toast bread, cut in cubes or torn in pieces
  • Mini chocolate chips
  • 1 banana, sliced (or diced)

Preheat the oven to 350°F. Then coat a muffin tin with cooking spray generously. You can also use a silicone muffin tray, which makes it easier to remove the baked muffins. Set aside.

In a large bowl, add the bananamilk, eggs, and sugar.

Whisk together thoroughly, making sure the eggs are completely broken up.

Add all the bread pieces and gently mix with a large spoon until all bread is coated. If more liquid is needed, add a splash of bananamilk to ensure all is bread is covered.

Immediately spoon the bread mixture into muffin tin. Each tin should be filled to the top.

Top each muffin with banana pieces and mini chocolate chips.

Bake for 25-28 minutes. The muffins will rise in the oven, and deflate a little once they come out.

Let them cool for just a couple minutes before removing from the tin.

How to Make Chocolate Banana French Toast Muffins

You can top the muffins with a little maple syrup, if desired.

    What if you don’t have access to chocolate bananamilk?

      You could use chocolate milk instead. If you want more banana flavor that just on the top, I would recommend smashing a ripe banana and adding it to the mixture or if it is too thick, just into each muffin between the bread layers before baking.
