It’s no secret that my days are typically fueled by coffee. Hot coffee, iced coffee, mocha, cappuccino, caramel macchiato; they are all my friends. While I drink it often, I can’t help but try to find ways to add it into some recipes as well.
As summer break is coming to an end, the days have been busier and busier. Almost daily we are running errands, grabbing school supplies we forgot on the last trip, and doing everything we can to make sure this school year has a smooth start.
While I constantly have the kids on my mind, I often have to step back and take a few minutes for myself. Typically I like to spend some time in the morning before the kids get up to drink a cup of coffee, review my ‘to-do’ lists and plan out our day. However, the days are long. With so much going on, I like to take a midday break, too.
Last week while we were running errands at Walmart, I saw cartons of International Delight Iced Coffee, which is now available in the refrigerated tea/juice section. I thought, for under $4 a carton, I could be getting a lot more for my dollar than going to a coffee shop. Caramel Macchiato and Mocha flavors went straight into my cart.
I can now enjoy iced coffee more conveniently. On a hectic hot summer afternoon, I sit down to refocus, I simply pour a cup of International Delight Iced Coffee over ice. It’s perfect to cool off, but also ideal for an easy year-round drink without the need to leave the house.
Mini Caramel Macchiato & Mocha Cake Donut Recipes
Ready-to-drink International Delight Iced Coffee is also great to use in recipes. You can easily swap it for milk or water in a variety of recipes to give them a change of flavor. I decided to make some mini cake donuts, great for a brunch dessert or a midday treat.
For the mocha cake donuts, use a chocolate box cake mix & instead of using the water it calls for, use International Delight Iced Coffee Mocha.
The recipe I made was the cake mix, three eggs, 1/4 cup vegetable oil and 1 cup International Delight Iced Coffee Mocha.
Once mixed, I poured the batter in a mini donut maker. It only took 7 minutes for each set to bake.
Cool on a wire rack. While they are cooling mixed up a basic glaze: 1 1/4 cup powdered sugar + 3 tablespoons International Delight Iced Coffee Mocha.
Place glaze in a plastic quart-size bag and snip a very small corner. Pipe the icing onto the donuts.
Add sprinkles, crushed chocolate pieces, or even chocolate drizzle, if desired.
You can also whip up a batch of Caramel Macchiato cake donuts!
- 1 box chocolate cake mix
- Eggs, oil as calls for on the box
- International Delight Iced Coffee - Mocha (amount to replace the water ingredient on the cake mix box)
- 1¼ cup powdered sugar
- 3 tablespoons International Delight Iced Coffee - Mocha
- Toppings if desired: sprinkles, crushed chocolate pieces, chocolate drizzle
- Mix cake mix as directed on the box, replacing water with International Delight Iced Coffee - Mocha.
- Carefully pour batter into donut maker.
- Bake as directed by manufacturer. My mini donut maker only takes 5-8 minutes.
- Allow all donuts to cool.
- For the glaze, mix 1¼ cup powdered sugar & 3 tablespoons International Delight Iced Coffee - Mocha.
- Add glaze to a quart-size plastic bag & drizzle onto donuts. Add sprinkles, crushed chocolate pieces, and/or chocolate drizzle, if desired.
