Jalapeno Jack Turkey Burger Recipe

Recently, you may have noticed a pattern in my articles regarding my desire to eat healthier. It has not just stemmed as a New Years Resolution, but as my inclination to keep the recently shredded pounds/baby weight off. Sometimes, when I find companies that offer great foods that are also good for me, it really makes my health-eating easier. Two brands I have been using lately include Jennie-O Turkey Store and Wholly Guacamole.

Heinz57 LogoIt’s the middle of football season and around here, that means entertaining, tailgating and Sunday gatherings. Tailgating and football games aren’t complete without the perfect foods. Some of our favorite tailgating foods include meatballs, burgers, brats and pulled pork sandwiches. I am always looking for new recipes to try and I have found some tasty ones on Heinz 57‘s website. Heinz 57 is sure to add flavor to any meal with their three products: Heinz 57 Sauce, Heinz 57 Steak Sauce, and Heinz 57 Sauce with Honey.

PULLED PORK RECIPE

One of my favorite recipes is the Heinz 57 Pulled Pork. It serves approx. 8 people and only takes 10 minutes to prep.

INGREDIENTS:

  • 1/2 cup Heinz 57® Sauce
  • 1/4 cup Lea & Perrins® Worcestershire Sauce
  • 2 tablespoons yellow mustard
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup tomato paste
  • 1 onion, chopped
  • 3.5 lb. boneless pork shoulder blade roast, trimmed and cut into 4 pieces
  1. Mix together 57 Sauce, Worcestershire Sauce, mustard, sugar, tomato paste, and onion in a 5-6qt slow cooker. Season with salt & pepper. Add pork and make sure it gets coated with the mixture. Cover and cook on low heat setting for about 8 hours, or until pork is cooked through (no longer pink or an internal temperature of 165°F) and tender, turning occasionally.
  2. To serve, remove pork from slow cooker. Pull pork into shreds using two forks. Return pork to slow cooker and stir until well mixed with sauce. Serve onto your favorite sandwich buns and serve immediately.

BBQ Pork Spare Ribs Recipe – Guest Post

Pork Spare RibsINGREDIENTS:

  • 3 pounds pork spare ribs
  • 1 cup (or more) ketchup
  • 1/4 cup (or more) sugar
  • 3 tbsp of sweet & sour sauce
  • 3/4 tsp worcestershire sauce
  • 3/4 cup regular or honey bbq sauce
  • 3/4 clove, minced garlic

Place the ribs in a large stock pot with enough water to cover. Bring to a boil and cook over medium/high heat for 1 hour.

In Medium saucepan, combine all the above ingredients while the ribs are boiling. Cook over medium heat for about 20 minutes. Use more or less of whatever you want to taste to your liking. I like mine sweet :)

Preheat oven to 350 degrees F

Cut the ribs between the bones and place in a baking pan. (I line mine with aluminum foil to cut down on a lot of mess) Pour the sauce over the ribs and cover with aluminum foil.  Cook for 30 minutes. Remove the foil and continue cooking for an additional 30 minutes.

My man was very surprised when I made these for the first time. I have a history of drying out pork chops and not being able to make them ‘correctly’. The first time I made this recipe, or made ribs ever, he was blown away. His only comments were ‘How do you screw up pork chops, but make incredible ribs?’ & ‘You can make these more often’. Haha

Ginger Peanut Chicken Recipe – Guest Post

My name is Shonda and my husband and I have been married for 7 years and we have an energetic and fun-loving two year old son and a brand new baby girl! Here’s a yummy and quick recipe I got from my friend, Becca. She made this for us after we had Shrade. I just had to have this recipe.

About 4-6 boneless skinless chicken cut into chunks

Mix:
4 T. olive oil
4 T. soy sauce
4 T. peanut butter
2 tsp. ground ginger
2 T. sugar

Put chicken in a frying pan on medium and pour the peanut butter sauce on top. Cook until done. Serve over rice.

Southwest Salad
Yields 6-8 servings

Ingredients:

2 c. brown rice
1-15 oz. can black beans, reduced sodium, drained and rinsed
2 c. frozen corn, thawed
1 red bell pepper, chopped
1 small white onion, chopped
1/4 c. white wine vinegar
1/4 c. cilantro, chopped
1 jalapeno, chopped
1 tsp. chili powder

Combine all ingredients and refrigerate. Enjoy!

Variations:

Try the recipe without the rice and add a second can of black beans.
Serve warm as a side dish or chilled as an appetizer with chips.
Add diced grilled chicken for a quick entree.
Add an extra jalapeno for a little more kick.
Double the recipe. Makes great leftovers!

Chicken With Soup Mixes

*I posted this when I first started my blog, but I finally added a picture.

Being a mom with 2 little ones, I love easy meals. This chicken is easy to prep and bake.

INGREDIENTS:

  • 2lbs chicken (I use boneless chicken breast usually)
  • 1 – 16oz tub of sour cream
  • 2 cans cream of chicken soup
  • 1 envelope dry onion soup mix
  • Milk

 

Preheat oven to 350 degrees. Place chicken 13″ x 9″ pan.

In large bowl combine both soups cans, onion mix, sour cream, and milk (I use about 1 soup can full of milk). Mix together and pour the mixture into the pan covering chicken. If it doesn’t cover it, add a little more milk.

Bake for an hour or until mixture is bubbling and starting to brown at the pan edges.

The soup mixture makes a great gravy.

 

Oven Baked Breaded Chicken Drumsticks

Oven Baked Chicken LegsThis is another chicken recipe that is quick and easy to bake in the oven. I use drumsticks most of the time, but use what chicken you have on hand or prefer.

INGREDIENTS:

  • 6 drumsticks
  • 1 sleeve Ritz Crackers (I prefer Roasted Vegetables flavor)
  • 2 eggs
  • 2 teaspoons Worcestershire Sauce
  • 1 tsp each salt, pepper, onion powder, garlic salt

Preheat oven to 425°. Lightly grease 9×13 cooking dish.

Put crackers in a gallon ziploc bag and smash them up into crumbs. I like to enlist my son’s help in this step. Add salt, pepper, garlic salt, and onion powder and mix it up (still in bag).

In a small bowl, beat the two eggs and Worcestershire sauce.

Coat each drumstick in the egg mix, them put it the ziploc bag and shake to coat with the cracker crumbs. Repeat with each one and lay into the pan, not touching.

Bake uncovered for approximately 60 minutes. It will start to brown and check to make sure any liquid coming out is clear.

*Each time I make this I like to try different cracker flavors or seasonings. Experiment and see what you can come up with!
